Fait remarquable, les deux tables sont dirig\u00e9es par un m\u00eame chef, <strong>Nicolas Sale<\/strong> associ\u00e9 \u00e0 <strong>Glenn Viel<\/strong> sur la Table du Kilimandjaro et <strong>Jean-R\u00e9mi Caillon<\/strong> au Kintessence.<\/p>\n<p>Nous avions rencontr\u00e9 <strong>Nicolas Sale<\/strong> il y a six ans, dans son premier poste de chef aux Monte-Cristo (H\u00f4tel du Castellet). La sensibilit\u00e9 et la d\u00e9licatesse de sa cuisine, doubl\u00e9e d&#8217;une humilit\u00e9 r\u00e9elle, laissaient augurer le meilleur. Je me souviens d&#8217;ailleurs parfaitement de ce que j&#8217;y avais d\u00e9gust\u00e9. Un velout\u00e9 de champignons. Le plus \u00e9bouriffant, le plus \u00e9poustouflant, le plus \u00e9tonnant, le plus renversant de tous les velout\u00e9s de champignons que l\u2019on peut imaginer. \u00c0 l\u2019image de toute sa cuisine : simple, hyper travaill\u00e9e, \u00e9tonnante, jamais choquante, toujours \u00e9l\u00e9gante. Visuels parfaits, go\u00fbts d\u00e9tonants, textures travaill\u00e9es, c\u2019est une cuisine d\u2019\u00e9motions, toute en sensibilit\u00e9, pr\u00e9cise et franche.<\/p>\n<p><a class=\"float-left\" style=\"margin-right: 5px\" href=\"http:\/\/macarons.intuition-web.com\/files\/2013\/02\/NS-2.jpg\"><img decoding=\"async\" class=\"wp-image-812\" title=\"NS 2\" src=\"http:\/\/macarons.intuition-web.com\/files\/2013\/02\/NS-2-300x168.jpg\" alt=\"\" width=\"240\" height=\"134\"><\/a>La r\u00e9compense d&#8217;aujourd&#8217;hui n&#8217;est que justice. Face aux compliments, le chef souligne que cette r\u00e9compense est celle de toutes ses \u00e9quipes, pas seulement celle d\u2019un homme. De fait, l\u2019attribution des macarons Michelin r\u00e9compense \u00e0 chaque fois le travail des \u00e9quipes, en cuisine et en salle, mais aussi du management qui a trac\u00e9 un cap ambitieux et donn\u00e9 les moyens n\u00e9cessaires. Ainsi, avec ces deux nouvelles \u00e9toiles, c&#8217;est \u00e9galement le travail r\u00e9alis\u00e9 par <strong>Jean Alain Baccon, <\/strong>co-directeur du groupe et directeur de la restauration et ses \u00e9quipes qui est r\u00e9compens\u00e9, et que nous souhaitons souligner.<\/p>\n<p>L&#8217;attribution d&#8217;une \u00e9toile suppl\u00e9mentaire \u00e0 la table du Kilimandjaro et d&#8217;une \u00e9toile au Kintessence (la table de l&#8217;h\u00f4tel K2, ouvert il y a une saison) soulignent les qualit\u00e9s de leader du Chef de cuisine, couronnent son obsession de la perfection et son incessante qu\u00eate de l&#8217;excellence, de la nouveaut\u00e9 et du travail. <strong>Nicolas Sale<\/strong> a su faire \u00e9voluer son travail sans jamais c\u00e9der \u00e0 la facilit\u00e9. Auparavant m\u00e9diterran\u00e9en, il est devenu montagnard et a adapt\u00e9 sa cuisine aux exigences d&#8217;une client\u00e8le nouvelle comme \u00e0 la sienne propre continuant son patient travail de \u00ab passeur d\u2019\u00e9motion \u00bb. <a href=\"http:\/\/alpes.france3.fr\/2013\/02\/24\/le-guide-michelin-recompense-deux-fois-un-chef-de-courchevel-savoie-205711.html\">L&#8217;article qui lui est consacr\u00e9 sur le site de France 3<\/a> souligne \u00ab&nbsp;<em>une belle ascension pour ce cuisinier du monde, dont l&#8217;inspiration et le style se nourrissent de voyages. Il explique par exemple que ce cabillaud \u00e0 la peau noire, il l&#8217;a choisi lors d&#8217;un voyage en Alaska. &#8220;On le fume l\u00e9g\u00e8rement pour que le go\u00fbt soit plus prononc\u00e9. Et on le sert avec des \u00e9crevisses&#8221;, <\/em>d\u00e9taille-t-il.<\/p>\n<p>C&#8217;est aussi la reconnaissance du travail des \u00e9quipes en salle dirig\u00e9es par <strong>Laure Prima<\/strong>, toutes occup\u00e9es \u00e0 magnifier la cuisine du chef, \u00e0 la mani\u00e8re de l&#8217;\u00e9crin d&#8217;un joyau. Si la m\u00e9diatisation r\u00e9cente des m\u00e9tiers de la cuisine a pu apporter quelques lettres officielles de noblesse \u00e0 ces m\u00e9tiers si durs, si exigeants, pourvoyeurs de r\u00eave et d&#8217;\u00e9motions, elle a oubli\u00e9 les m\u00e9tiers de la salle, prolongements indispensables de ceux de la cuisine.
