Le chef bourguignon, pass\u00e9 par des tables de renom comme Le Pressoir d\u2019Argent &#8211; Gordon Ramsay (2 \u00e9toiles \u00e0 Bordeaux), La Table de Pavie (2 \u00e9toiles \u00e0 Saint-\u00c9milion) ou encore le Relais de Bernard Loiseau (2 \u00e9toiles \u00e0 Saulieu), \u201c<em>souhaite insuffler une cuisine \u00e0 la fois ancr\u00e9e dans le terroir bourguignon et tourn\u00e9e vers l\u2019innovation, tout en sublimant l\u2019exp\u00e9rience &#8220;vinostronomique&#8221; unique de cet \u00e9tablissement\u201d<\/em>.<\/p>\n\n\n\n<p>La Table des Climats propose en effet un concept original : les clients choisissent d\u2019abord leurs vins avec l\u2019aide du sommelier parmi plus de 800 r\u00e9f\u00e9rences de toutes les appellations de Bourgogne, avant de se
